Pumpkin Butterballs


The holidays make me think of cookies, you know those same cookies everyone makes during the holidays? Thumprint cookies, linzer, spiced chewy cookie, crumble bars and one of my favorites, butterballs are just some of the usual suspects.  I have adapted the butterball recipe into a pumpkin butterball.  I wanted to call them "fall balls" but thought, maybe not the best name.  Butterballs were always one of my favorite cookies because they aren't overly sweet and they're so good.  I have an old copy of the recipe from my grandma but here is what I referenced for this recipe.

The Recipe 

1/2 c. butter 
1/2 can of pumpkin 
2 c. whole wheat flour 
2 tsp. vanilla
1 c. chopped walnuts 
1/4 c. sugar 
1 tbsp. pumpkin pie spice 
1/2 tsp. salt 
1 c. powdered sugar mixed with 4 tbls cinnamon (for rolling in after baking) 

Start by creaming the sugar, butter, salt and vanilla.  Once blended incorporate the pumpkin.  Fold in flour and nuts.  The recipe I referenced said the yield would be 4 dozen, which you can get if you roll really small, I got almost 3 dozen.  I have a terrible oven in my apartment which is a shame, but after preheating your oven to 325 you bake for 10-15 minutes.  (The food.com recipe I linked says 22-25 minutes but after 12 minutes mine were over baked– which again is testament to how terrible my oven is. So I recommend checking them periodically)  You want them to be on the verge of being completely firm but not over baked and still soft in the center.
